Frassaï's Teisenddu takes inspiration from the Welsh settlers’ torta negra, the dark cake once baked by the Welsh settlers who, in 1865, carried their traditions across the ocean to Patagonia. The opening greets you like a tearoom in the Patagonian wind: bitter orange zest cracked over juniper, with warm spice from nutmeg humming beneath. At its center sits a boozy heart of rum, the kind of soaked, warm sweetness you associate with dried fruit and nuts steeped overnight. Mimosa drifts through as a soft golden presence, more texture than flower. Then leather and dark sugar crystals settle the recipe, caramelizing into a slow, resinous finish. Perfumer Roxanne Kirkpatrick keeps the gourmand register tethered to something arid and woody — never dessert-like, more like a cake kept near a fire, remembered rather than eaten.
