Bake takes the small lemon cupcake as its subject, the sort of treat that makes a good bakery worth stopping for. The idea began when Anaïs and Olivier Cresp tasted one at Magnolia Bakery in New York. Cresp describes aiming for a fluffy cream impression while avoiding sticky sweetness.
