Vanillin was historically isolated from vanilla beans (Vanilla planifolia), but today it is predominantly synthesized for industrial use. Its chemical formula is C₈H₈O₃, and it is known as a phenolic aldehyde with three reactive groups: hydroxyl, aldehyde, and methoxy.
