About Celery Seeds

Celery seed oil is steam-distilled from the dried fruits commonly called seeds of *Apium graveolens*. Proportions vary with origin and lot, but limonene and selinenes often make up much of the oil, while much smaller amounts of phthalides determine its distinctive celery character.

Scent Profile

Warmer and drier than a fresh stalk, it suggests **green spice, roots, soil, and faint nutty warmth**. Beneath a bright, citrus-like opening sit vegetable stem, seed, gentle bitterness, and a shadow of sweet wood. Phthalides are powerful even at low concentration, giving the oil a dense and slightly strange contour that differs from a simple herb note.

Use in Perfumery

From the heart into the base of aromatic, woody, spicy, and chypre structures, celery seed adds green depth and dry warmth. It puts an earthy shadow beneath citrus or herbs and brings sap-like movement to woods and mossy effects. A high dose can turn culinary, so traces are useful for joining structural edges or drying a damp green accord.

Analyses often find limonene to be the largest constituent of the essential oil, yet characteristic celery odor depends strongly on minor compounds such as sedanolide, sedanenolide, and 3-n-butylphthalide. The most abundant molecule and the most character-defining one need not be the same.
